Kalaji masala or soya kalaji is a tasty one-pot dish.Liver means kalaji of any animal usually, beef, mutton, or chicken. Kaleji ka salan or kaleji masala means to fry liver-pieces of the beef or mutton liver with spices like red chili, coriander, cumin, turmeric,garam masala, and Ginger Garlic Paste (adrak lasan paste)soya.Usually, tomatoes onions, are also added to make masala gravy. Complete the meal with fresh naan and aromatic Boil Rice.

What is Soya kalaji?


The name soya kaleji a is a Hindi name where ‘kaleji’ means liver (lamb, goat or chicken) and ‘soya’ means dill leaves. Basically,soya kaleji means liver pieces are cooked in spices to prepare a spicy curry whether it’s dry or gravy that is everyone’s own preference. It can be prepared with the liver of beef goat or chicken.

How To Cook Beef liver


Add 1/4 cup of oil in a saute pan over medium heat. Add onions and cook until caramelized and golden brown, for about 10 minutes.Add 1 tbsp of Ginger Garlic Paste (adrak lasan paste) and cook for 1-2 minutes until the raw smell gone.

Add the liver and cook for 2-3 minutes until change color.

Stir in the red chili powder 1 tbsp ,coriander powder 1 tbsp, cumin powder 1 tsp, turmeric powder 1 tsp, salt 1 tsp,and and red chili flakes 1 tsp.

Next add, tomatoes, you can use chop or paste Tomato Paste (Homemade Tomato Paste) Mix well and cover. Cook for 5-7 minutes on low heat.

When the tomato are soft,add 1/2 cup of water and mix well.

Cover and Cook on low Heat until liver is tender.

  • 500 Gram Beef liver
  • 1 Tbsp Ginger garlic paste
  • 2 Spring onion (Spring onion is not available you can used onion)
  • 4 Medium Tomato
  • 1 Tsp Turmeric powder
  • 1 Tsp Cumin powder
  • 1 Tbsp Coriander powder
  • 1 Tbsp Red chili powder
  • 1 Tsp Red chili flakes
  • 1/2 Bunch Soya leaves
  • 1/4 Cup Cooking oil
