1.Mutton liver
2.Yogurt 1/2 Cup
3.Fried onion 1/2 Cup
4.Coriander coarse 1 tbsp
5.Cumin coarse 1/2 tsp
6.Red chili flakes 1 tsp
7.Red chili powder 1 tbsp
8.Tumeric Powder 1 tsp
9.Salt 1 tsp
10. Whole spices powder 1 tsp (garam masala)
11.Oil 1/8 cup
12.Ginger paste 1 tsp
13.Garlic paste 1 tsp
14. Water 1 cup
Making Kalaji
Wash the mutton liver (mutton Kalaji) properly and then add following ingredients.
1.Yogurt 1/2 cup
2.Ginger paste 1 tsp
3.Cumin coarse 1/2 tsp
4.Garlic paste 1 tsp
5.Salt 1 tsp
6.Fried onion 1/2 cup
7.Coriander coarse 1 tbsp
8.Tumeric powder 1 tsp
9.Red chili powder 1 tbsp
10.Whole spices powder 1 tsp
10.Red Chili flakes 1 tsp
11.Oil 1/8 Cup
And mix well and marinated for 1 hour in refrigerator.
Using a cooking pot,now add marinated mutton liver and fry for 1 minutes until color change.
Then,add 1 cup of water and cover and cook for 20-25 minutes until liver is tender and oil realased for the top of the gravy.
Serve Roti (Chapati & Phulka).

Ingredients
- 500 Gram Mutton liver
- 1/2 Cup Yogurt
- 1/2 Cup Fried onion
- 1/8 Cup Oil
- 1 Tbsp Red
- 1 Tsp Red
- 1 Tbsp Coriander coarse
- 1/2 Tsp Cumin coarse
- 1 Tsp Salt
- 1 Tsp Turmeric
- 1 Tsp Whole
- 1 Tsp Ginger paste
- 1 Tsp Garlic paste
- 1 Cup Water
- Chopped Coriander for garnish
- Chopped green chili for garnish
Instructions
- Wash the mutton liver (mutton Kalaji) properly and then add following ingredients.
- 1 tsp of salt, 1 tsp of turmeric powder, 1 tbsp of red chili powder, 1 tsp of Red chili flakes, 1 tsp of whole spices powder, 1 tsp of ginger paste, 1 tsp of garlic paste, 1 tbsp of Coriander coarse, 1/2 tsp of cumin coarse, 1/2 cup of yogurt,1/2 cup of fried onion and 1/8 cup of oil.
- And mix well and marinated for 1 hour in refrigerator.
