Tori ki sabzi is a spicy, flavoured curry where ridge gourd pieces are cooked in spicy onion-based gravy.It is regularly prepared in India It is mostly relished with Roti (Chapati & Phulka),parathas,and even rice items like Boil Rice, etc. It is a rapid recipe and a perfect dish for busy working days.

Turai ki sabzi is a very simple and easy recipe. It is prepared with very common and minimal ingredients and all the ingredients are regularly used in any Kitchen pantry.

Tori/Ridge Gourd is cooked in onion-based gravy and is flavored with mild spices. There is no use of tomato in this recipe. Comes together in less than 30 minutes. Perfect side dish for a weekday meal.

Ridge gourd : The key ingredient of the recipe.

Garlic: These are the most common ingredients used to give flavour to the gravy.

Onion: I have used sliced onion for the recipe. It gives a flavour, taste and texture to the dish.

Green chillies & coriander leaves: Green chillies add a taste and coriander leaves add a refreshing aroma to the dish.

Ground spices: For the ground spices, I have used turmeric powder, red chilli powder, red chili flakes for the perfect flavour and taste of the turai ki Sabzi.

Oil: Any cooking oil can be used to prepare the gravy. I have used vegetables oil, but you can also use flavourless oil like, sunflower oil, rapeseed oil etc.

How To Make Tori ki Sabzi?


Preparation

Wash and cut all the veggies- ridge gourd, onion, green chili,coriander leaves and keep them aside.

Heat,oil,add onion to the pan and fry it on a medium heat for a minutes.

Add chopped garlic to the pan and cook it on low flame for another 1 minutes.

When the onion becomes soft and translucent.

Add the chopped ridge gourd,into the pan and give a nice mix.

Cover the pan and cook it on low flame for another 5-6 minutes. Stir in between if required.

Add 1 teaspoon of red chili powder, 1 tsp of turmeric powder, 1 teaspoon of salt, and 1 teaspoon of red chili flakes.

Cover with a lid and cook on medium heat until all the moisture has evaporated and is tender,Keep stirring at regular intervals and scraping the bottom of the wok.
