WHAT IS Hyderbadi DAHI Baray?

Dahi Baray is a popular Hyderabad Cuisine snack made of fried gram flour fritters that are soaked in water until soft. They’re then covered in mint chutney and garnished with a spicy tempering / tadka.It is rich, thick, velvety, spicy, and has a fantastic tangy taste.

It can be served as an appetizer, side dish, or snack, and is often part of Pakistani festivities like Eid and Ramadan.

Ingredients

Gram-Flour:

Besan or chickpeas flour is made from ground chickpeas. It is also available in grocery stores and online grocery stores.

Powder-Spices:

Need Cumin powder, salt, Coriander powder, and turmeric powder.

Water:

You will need water to make the batter. Add it slowly to ensure you get the right consistency.

Optional ingredient:

Ginger garlic paste.

Tip And Tricks

Bhalla batter:

Bhalla batter has a medium consistency. Make sure the batter is not too thin, runny, or too thick.

Oil:

Always choose the best quality oil, sunflower oil, vegetable oil, and canola oil.

Temperature:

Make sure that the oil that you use to fry the Bhalla is not too hot or cold. To test the temperature of the oil add a few drops of batter to the oil.

How To Make Hyderabadi Dahi Baray?

Making Dahi Baray Batter

Take a bowl of all the ingredients, 1 cup of besan, 1 teaspoon of Cumin powder, 1 tablespoon of Coriander powder, 1 teaspoon of turmeric powder,1 teaspoon of salt, ginger-garlic-paste-adrak-lasan-paste.

Slowly add water and mix to get a smooth consistency, whisk the batter with a whisk.

Frying Bhalla And Soaking In Water

Heat oil in a kadai on medium heat. When the oil becomes medium-hot, add a small amount of batter to the hot oil. Fry the Bhalla on medium heat, stirring often.

Fry the bhalla till they become golden and crisp. , this will take around 10 minutes on medium heat. Drain on paper towels. Repeat until all batter is finished.

Add the bhalla to the water. Soak them for 20 minutes. Bhalla will swell up and increase in size double. Take each Bhalla and flatten and press between your palms to drain water.

Making Yogurt Mixture

Take 1 cup yogurt in a bowl and beat it till smooth. then add 4 tbsp of Mint Cilantro Chutney (Dhaniya Pudina Chutney),1 tsp of Cumin powder, 1 tsp of Coriander powder, and 1 tsp of salt as needed.

Slowly add 1 cup of water and mix well until a smooth paste.

Now put this on fried Bhalla.

Making Tempering

In a small pan heat oil on medium heat. Add the mustard seeds, and cumin seeds, nigella seeds, and allow it to crackle. Once it Adds curry leaves, whole red chili, and fry until it starts getting golden brown.  

Pour the tempering over the dahi bhalla.
