Chop onion, and capsicum using your food processor.

Whisk 2 large eggs, 1 teaspoon salt to taste, in a large bowl using a wire whisk or a fork.

Heat 2 tablespoons of oil or butter in a frying pan on medium heat. Once the oil is hot, then add chop veggies and cook until veggies are soft.
