Cooking Chana Dal
Wash and soak the lentils for at least 20 minutes and after 20 minutes. Drain the water, completed.
Put the drained lentils, around 3 cups of water in a cooking pot and bring to a boil. Lower the flame and cook for 25-30 minutes. Check between.
After 30 minutes, check the lentils are tender. When the lentils are tender, switch off the flame.
Cooking Lauki
Heat 1/3 cup of oil in a wok. Once the slightly hot.
Add whole spices, and fry until they start to fragrant.
- Star anise 1
- Green cardamom 4
- Cinnamon stick 1
- Cloves 3
- Black peppercorns 8
- Black cardamom 1
Add onion sliced 2 small and along with chopped ginger, garlic and keep stirring.
And then add sliced green chili and fry for a minute until translucent.
Add lauki and keep stirring, cover, and cook without water until the lauki is half cooked. It will take around 10-12 minutes, medium flame.
Next, add tomato and along with powder spices mix well and cook for 10 minutes till the tomatoes are broken down and mushy.
When the tomatoes are soft and the oil starts to leave the edges.
Finally, add the cooked dal along with the stock to the pot.
Now add 1/2 cup water and green chili. Once the water comes to a boil, reduce the heat to medium and cover, Cook a further 5 minutes until the dal turns thick.
Enjoy the daal with Boil Rice, and warm Roti (Chapati & Phulka)

- 1 Cup Split Chickpea lentils Chana Dal

- 3 Cloves Garlic chopped
- 2 Medium Tomatoes

- 1 inch Cinnamon stick
- 1 Black cardamom
- 4 Green cardamom

- 8 Black pepper corns
Powder spices
- 1 and 1/2 Tbsp Red chili powder
- 1 Tbsp Coriander powder
- 1 Tsp Cumin powder
- 1/2 Tsp Turmeric powder
- 1/2 Tsp Salt
- 3 and 1/2 Cups Water
Garnish
- 4 Green chili
- Coriander leaves As needed
