Preparation

Rinse, peel the vegetables, and cut them into chopped and square cubes.

Cooking Aloo Matar Gajar

Heat 1/3 oil in a wok on medium-low flame.

Add 2 medium chopped onion, along with chopped ginger and garlic, fry until onion turn transparent.

And then add 2 medium potatoes cubes and stir-fry on a medium flame.

Next, add 1 teaspoon of red chili flakes,1 tablespoon of coriander powder,1/2 teaspoon of turmeric powder, and add salt according to your taste. Mix them well.

Add 2 medium chopped tomato and sauté for 1 minute.

When the tomato are sauté.

Then Add 1/2 cup of water, cover and cook, for 5 minutes until tomato are mushy. Keep stirring in between.

When the tomato are mushy and started to released oil from the bottom.

Add the carrot and peas. Give a good Stir for 1 minutes until change color.

Add 1/2 cup more water, cover, and cook for 10 minutes on low flame.

Once the vegetable are cook well and liquid is totally dry and oil start to the sides.

Now sprinkle coriander and green chili.

Serve this dish with paratha. It can also serve as a side with any kind of pickle.
