- 1 whole Brain Mutton
- 1 Medium Onion Chopped
- 1/2 Tsp Salt
- 2 Green chili Chopped
- 1/2 Tsp Ginger paste
- 4 Tbsp Cooking oil
- 1/2 Tsp Turmeric powder
- 1/2 Tsp Cumin powder
- 1 Tsp Coriander powder
- 1 Tbsp Red chili powder
- Coriander leaves Chopped as needed
- 1/2 Tsp Garlic paste
How to make Brain masala (Maghaz fry)
Heat 4 tablespoons oil in a pan and add onion, fry for 1 minute on medium flame then add 1/2 teaspoon ginger paste,1/2 teaspoon garlic paste and fry again minutes.

Next, add 1/2 teaspoon salt,1/2 teaspoon turmeric powder,1/2 teaspoon cumin powder,1 teaspoon coriander powder,1 tablespoon red chili powder, and then add brain fry the brain with masala for 2 minutes on medium flame until the brain is tender.

When the oil separates from the pan, add chopped green chili, and coriander leaves.Serve with homemade paratha.
