Ingredients For Barfi
Gram Flour ( Besan) 1 cup fresh and sifted
Sugar 1/2 cup
Cardamom powder 1/2 tsp
Water 1 cup
Ghee 1/4 cup
Almond sliced as needed
Pistachio sliced as needed
How to make Besan Barfi
Roasting Gram Flour (besan)
In a heavy-based kadai add 1/4 cup of ghee.Once melted, add 1 cup of sifted gram flour ( besan) into the kadai , gradually mixing in the rest of the ghee.Once the mixture has darkened in color, reduce heat to lowest and. Stir continuously until ghee is completely absorb by the besan flour.Remove mixture from heat.
Sugar Syrup
In a non-stick wok on medium heat, add 1/2 cup of sugar and 1 cup of water, mix and melt the sugar, cook until the sugar comes to one string consistency, to check, take a drop and try to stick between your thumb and index finger, if a single thread is formed your good to go.
Combine Roasting Gram Flour And Sugar Syrup
Once the roasted gram flour are cool,combine with the sugar syrup mixture and whisk well to make a lump Free mixture.
Reduce the heat,then add 1/2 teaspoon of cardamon powder and while stirring.once the mixture has a thick consistency,turn off the heat.
Transfer to grease pan and Garnish it with the sliced pistachios, press the sliced pistachios lightly with a clean spatula and allow it to rest for half an hour to set.Cut into squares, rectangle or any shape of your choice.
